We begin with prime organic vanilla beans that have been aged for over two years. This brings out the different flavor components of the Mexican vanilla bean. We soak the beans in rum (50% alcohol by volume), thus producing higher concentrations of flavor compounds to produce the Vanilla Nectar which we mix with cane alcohol and purified water for the final product.
